Raw Tart and Raw Bites

A Joyful Summer Solstice to you all!

(which peaks at about 11 pm in the UK)
 

With the recent rare Transit of Venus influence putting Love in our Hearts (and in our Tarts!) I offer you my celebratory Raw Lucuma Lemon “Cheesecake” recipe which anyone can make (and it’s so healthy and packed with O3, you can eat a slice for breakfast!)

Being an intuitive chef, I don’t weigh anything, I just measure with my feelings, and it will depend upon the size of your dish and the thickness you like your base but I suggest a handful of each ingredient is plenty.         I had some mixture left so I made the little Coconut  Petit Fours (pictured further below) . 

Raw Lucuma Lemon “Cheesecake”

FOR THE BASE
 
Separately grind the following in a high speed blender:
 
Flax seeds 
Walnuts
Sesame Seeds
Hemp Seeds (to give it a little crunch)
Grated Coconut (optional)
 
Place each of the above in a bowl with some ground Cinnamon; ground or liquid  Xylitol (from the birch tree); a pinch of Stevia (optional); a small amount of ground Coconut Palm Sugar or any other preferred low GI sweeteners.
 
Melt about half a cup Coconut Oil (in a warm room or over a bain marie) and add to the above mix with some water until it is fairly cohesive in a malleable ball.    If it’s too wet or too dry at this stage, nothing is lost!   Simply add some more ground seeds/nuts/coconut (i.e. the dry ingredients) or more coconut oil/coconut water or ordinary filtered water (the wet ingredients).     
 
Place a piece of parchment paper into about a 2″ deep dish (this will enable you to lift out the finished raw tart for slicing or pastry cutting for display; and the mixture doesn’t stick to the glass dish.      Place the above mixture into the dish and press to make a dish shape.   Either use your hands, knuckles or special implement.    You can use a rolling pin end if you have one; I used the plunger from my Vitamix to press it to the sides of the dish.   
 
Once you have the shape you want, put in the fridge to set or, if you aren’t using it for a few days, it can be kept fresh in the freezer until ready for use.    As this is live food, it won’t last as long as processed substances mistakenly referred to as “food”!
 
FOR THE FILLING
 
Cashew Nuts (soaked in water for about an hour, discard water)
Blend cashew nuts with a small amount of water, coconut water or  lemon juice sufficient to make a cashew nut cream,  and place in a mixing bowl.
 
Pulp about 5 lemons  with skin (depending upon how lemony you like it, I like my lemon tarts to be both tart and lemony!) add a little coconut water if necessary just to help the blend depending on the power of your blender.
 
Place this lemon mixture into the bowl with the Cashew Nut cream “cheese” and add sufficient Lucuma to sweeten and absorb the lemon; and mix all three ingredients together.
 
When the base is solid, lift out of the dish, put onto a plate and gently pour in the filling mix.      Return to the fridge to set for about 2 hours or more.   
 
Before serving, decorate with a little grated nutmeg if you like it, sprinkle with grated coconut,  strawberries, kiwi, passion fruit etc and enjoy.     It’s substantial enough for a good start to the day as well as being a lip-smacking, taste-bud launch to accompany afternoon herbal tea – with ancient friends just met.   Being fresh and lovely, it will probably keep for 3 days.
 

I had a very small amount of base mixture left over, so I pressed it into balls around some organic dried sour cherries and rolled them in dried coconut to make these  Coconut Petits Fours below.     They didn’t last long!

My Big Green Smoothie today comprised:

A large bunch each of Purslane and Coriander (both from the organic Farmer’s Market) ~   Red Clover (grown from organic seed in my window box – it takes only a few days) ~ 3 Red Clover Heads and 2 Thistle (foraged in the morning) ~ 1 Whole Lemon (unwaxed, organic, skin and pips included) ~ 1 Piece of Ginger peeled ~  1 Apple  ~ 1 Orange (no peel)   

Whizz up in a powerful blender and feel vital!
